These nutritious, sweet and creamy Cashews have been sourced from Java. An excellent source of Copper, Magnesium, Zinc and Manganese- these Cashews are carefully cracked using traditional techniques to preserve the nutritional benefits and flavour.
What is it?
We are excited to have our really raw cashews available again, now we are getting them from a group of farmers in Biting on the Island of Java. The cashews are ungraded so the size varies with some split cashews in the mix. Our goal is to gradually improve the size and grading of the cashews and we see this as a long term project working with this community. Please visit the grower page and look at the video of the ladies processing the cashews in the village using the traditional knife or "Kacip Ceklok" in Indonesian. Even though they don't look as good these cashews have the same sweet creamy flavour as they are processed without steaming or boiling oil.

Cashews are great for your heart! They have a lower fat content than other nuts and approximately 75% of their fat is unsaturated fatty acids, with about 75% of this unsaturated fatty acid being oleic acid - the same heart-healthy monounsaturated fat found in olive oil. Studies show that oleic acid promotes good cardiovascular health. Studies of diabetic patients show that monounsaturated fat, when added to a low-fat diet, can help to reduce high triglyceride levels. Triglycerides are a form in which fats are carried in the blood, and high triglyceride levels are associated with an increased risk for heart disease, so ensuring you have some monounsaturated fats in your diet by enjoying cashews is a good idea, especially for persons with diabetes.
Cashews are an excellent source of the minerals copper, magnesium, as well as zinc and manganese. Copper is important for the utilisation of iron, the development of bone and connective tissue and the production of the skin and hair pigment called melanin. Magnesium helps the body maintain a healthy ratio of calcium to potassium, and low magnesium levels may increase the risk of high blood pressure and heart attacks.
Our Really Raw Cashew growers in Biting, Indonesia use a unique traditional knife to crack the cashew shell without using any heat. Other so called "raw" cashews are actually steamed or fried in oil when they are in the shell to make them easier to crack. You can really taste the difference with this artisanal product.
The standard way of processing cashews is to either steam them or put them in boiling oil to make them easier to get out of the shell, which is the process the vast majority of cashews go through. They’re called “raw” because they haven’t been roasted, but in fact the “raw cashews” you buy in the supermarket have been steam treated or fried in boiling oil. During this process the cashew degrades significantly and essential fatty acids and enzymes are destroyed Instead, our cashews are sundried and hand-cracked. This takes a lot longer because the shells aren’t brittle - they’re soft, so it’s quite a skilled, slow process, but the end result is that the nut is really raw. Combined with the unique volcanic soil and dry climate of Flores, this process creates these absolutely amazing cashews - much creamier and a lot sweeter than normal so-called “raw”’ cashews. Normal cashews tend to have a savoury taste to them, whereas Loving Earth’s Really Raw Cashews have a sweet taste, and that’s the difference.
